Ingredients

  • 1 ½ cups rolled oats
  • 1 apple honeycrisp is best - shredded
  • ¼ cup pecan raw, whole
  • 1 tbsp ground flax seed
  • 1 tbsp hemp seed
  • 1 tbsp chia seed
  • 1 tbsp vanilla
  • ¼ cup maple syrup
  • ¼ cup coconut oil melted
  • ¼ tsp salt

Instructions

Meal Prep Instructions:

  • Heat oven to 375
  • Pulse oats and nut/seed mixture in a blender or food processor until a thick grainy texture forms - it should not be fully ground.
  • Pour oat/nut & seed mixture into a large mixing bowl and combine with remaining ingredients
  • Mix well and spread onto a parchment paper-lined baking sheet and bake for 25 minutes - check texture to see if it's still soft. It will be a naturally softer texture because of the juices of the raw apple and you don't want it to burn! It will harden slightly as it cools
  • Let it cool and continue to crisp on the counter before storing in an airtight container for up to one month
