Better Than Eggo Freezer Waffles

You’d never know how healthy these are compared to the store-bought competition! Below are options to add fermented grains from sourdough, or extra protein! Naturally sweetened with honey, plus simple on hand raw ingredients for the perfect prep ahead waffles!

Ingredients
  

This is a bulk prep worthy and will make between 20-25 eggo sized waffles!

  • 2 cups flour
  • 2 cups sourdough discard or active sourdough starter OR do 2 cups of regular flour if NOT doing sourdough
  • 2-4 cups milk 4 cups if you AREN'T doing sourdough and did 4 total cups of flour!
  • 3 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • ½ cup coconut oil melted
  • ¼ cup raw honey less if prefer more mild / less sweetened waffles
  • ½ cup protein powder optional
  • 1 tbsp chia, hemp and ground flax seed as another optional protein source
  • optional mix in: mini chocolate chips

Instructions
 

Meal Prep Instructions: 

  • Add all the dry ingredients (flour, salt, baking soda/powder, cinnamon) to a large reusable food storage bags for a quick homemade waffle mix! Remaining ingredients need to be added when you cook.

Meal Assembly Instructions:

  • In a large mixing bowl, add prepped homemade dry waffle mix. Add remaining ingredients and whisk until well combined and powders are activated (small bubbles start forming). If the texture isn’t pourable into a waffle maker, add additional milk to thin (depends on if you added optional protein options!). Fold in optional mini chocolate chips.
  • Pour mixture into a pre-heated waffle maker, cover, cook to your liking.

Freeze Storing:

  • These make an excellent healthy homemade alternative to store-bought freezer waffles! Just let them cool completely and store laying flat in a large gallon sized bag, stacking with parchment paper in between so they don’t stick together. Seal with as little air as possible in the bag and freeze
  • When ready to re-heat, thaw slightly then pop in the toaster on a low setting until warmed throughout. If you don’t want them to get crispy in the toaster you can alternatively microwave for a few seconds.
