Soft boil 1/2 cup of lentils with 1 cup of water or broth covered until liquid is absorbed and lentils are soft (10-15 min) add more water as necessary to cook until soft.
Steam carrots
Add chopped carrots to a steam basket and small sauce pan filled with 2 inches of water. Cover and simmer until carrots are soft (about 8 min). Cool slightly
Blend ingredients
Add cooked lentils, steamed carrots and all other ingredients to a high power blender
Blend on high until very well combined (add water one tablespoon at a time if it feels too thick)
Store in glass container for up to 5 days in the fridge
