Prep Produce: shred 3 cups green cabbage, dice 6 celery stalks, 2 carrots, 1/2 red onion, mince 2 garlic cloves. Add everything to a large reusable food storage bag, refrigerate until ready to assemble meal.
Meal Assembly Instructions:
Cook Veggies: To a large dutch oven or stock pot over medium high heat add 1 tbsp olive oil. Once hot add prepped veggies and cook until softened and slightly charred, about 10 min. Lower heat to medium and add spice mixture: 1 tsp ginger, 1 tsp turmeric, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp thyme, 1 1/2 tsp salt, 1/2 tsp pepper. Toss with veggies to coat.
Simmer: Add 1 can garbanzo beans (drained), 6 cups bone broth. Stir until well combined, cover and simmer for 10-15 minutes until veggies are very soft and soup is fragrant. Taste and add additional seasoning or broth to your liking.
Serve: Finish soup with juice and zest from 1 lemon and 1/4 cup parsley. Enjoy!
