Healthy Baked Chicken Tenders

Ingredients
  

For the chicken

  • 1 lb chicken strips or you can butterfly a breast and slice into strips
  • ¾ cup flour you can sub a gf flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • 1 egg beaten
  • ¼ cup parmesan cheese freshly shredded

    Meal Assembly Instructions - pre-heat oven to 450, you want it hot so they crisp up nicely! You can also do this in a large skillet with oil for a more crisp finish, but oven is a super easy no hassle method:)

    • Pat prepped chicken as dry as you can with a paper towel. Add prepped chicken to a large mixing bowl with seasoning blend (1 tsp garlic powder, 1 tsp onion powder, 1 tsp salt, 1/2 tsp pepper, 1/2tsp paprika, 1tbsp flour, 1/4 cup parm cheese) with gloved hands, toss to coat. Add beaten egg, toss to coat, add remaining flour (about 3/4 cup) and toss again to coat as evenly as possible. Batter will start to feel very sticky, if it starts to stick to your fingers, scrap it off and toss with a fork, you want as much of the batter as possible to stick evenly on the chicken tenders.
    • Add chicken to a parchment lined baking sheet and really pat breading onto each piece, scrapping some from the mixing bowl if necessary to cover pieces that don't have as much. Spread out evenly so each piece is touching the sheet. Drizzle lightly with oil, but don't rub it in (helps for a crispy finish).
    • Cook for 7 minutes and flip them for an additional 7 minutes. Finish with a 2-4 minute high broil for an extra browned look without over cooking!
    • Once out the oven this is a great time to toss with any additional sauce as desired - a hot honey combo is one of our favs! Just drizzle with honey and fav hot sauce and toss gently with tongs to coat. Cool slightly, dip in prepped ranch, enjoy!
