Meal Prep Instructions: preheat oven to 350
Make the batter
To a large bowl add wet ingredients - 1 cup pumpkin puree , 1 tbsp pumpkin pie spice, 1 tsp vanilla, 1 egg, 1 cup milk to a bowl and mix until well combined
Add dry ingredients - 1/3 cup maple syrup1 cup almond flour, 1 1/2 cups oats, 1 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, fold into wet ingredients until just combined but not over mixing.
Bake batter
add batter to an 8inch square baking dish, top with optional chocolate chips, pecans and flaky sea salt.
let it rest for 30 min to help oats begin to soak up moisture.
Bake for 40-45 minutes and check center with a knife to make sure it comes out clean - cook time varies and it will still feel very soft even if a knife comes out clean, you have to cool it almost completely to let it fully set before slicing - oats will continue to soak up moisture so you don't want to over cook it.
