- ¼ cup pepitas (pumpkin seeds) raw, whole
- 1 tbsp flax seeds
- 1 tbsp vanilla
- ¼ cup maple syrup
- ¼ cup coconut oil melted
- ¼ tsp salt

Heat oven to 350
Pulse oats and nut/seed mixture in a blender or food processor until grainy
Pour oat/nut & seed mixture into a large mixing bowl and combine with remaining ingredients
Mix well and spread onto a parchment paper-lined baking sheet and bake for 15 minutes
Let it cool and continue to crisp on the counter before storing in an airtight container for up to one month
