Strawberry Balsamic Vinaigrette

½ cup olive oil ¼ cup balsamic vinegar 2 tbsp lemon juice about 1/2 a lemon 1 garlic clove 1 cup strawberries fresh, hulled salt and pepper to taste

Add everything to a wide mouth mason jar and blend with an immersion blender until smooth and creamy. Add salt and pepper to adjust the flavor.
Refrigerate for up to 5 days and bring to room temp when ready to use, it's normal for the oil to harden/separate!
