Add strawberries and sweetener of choice to a sauce pan over low heat, simmer until berries easily mash.
Mash in the pan with a fork or other utensil. I personally love to blend it with a hand held immersion blender for an extra smooth jam but mash to your preference!
Continue cooking on low heat, add chia seeds, stir until juices reduce and thicken slightly. Remove from heat.
Let the jam cool completely in pan off heat. Once cool and thickened add to a glass container and refrigerate for up to 2 weeks. It will continue to thicken after refrigeration!
