Thick, creamy, perfectly sweet smoothie with purple sweet potato, tangy lemon, fresh blueberries, and kefir for an incredible antioxidant loaded, gut healthy meal on the go
1smallpurple sweet potato(cooked, see instructions below)
1largebanana
1cupof blueberries
Juice from 1 lemon
2tbsphemp seeds
1cupof plain kefir
1cupalmond milk
1cupcoconut water

Meal Prep Instructions:
Cook purple sweet potato: Add your washed (but not peeled) potato to a pot of boiling water and boil until a fork easily pokes through. Cool completely before using your hands or a fork to peel the skin off. It should slide off easily.
Make your prep bags: to each reusable food storage bag - I love this Stasher Bag Bundle add:
1/2 the cooked sweet potato
1/2 a banana
1/2 cup blueberries
Juice from 1/2 lemon
1tbsp hemp seed
Freeze ingredients until ready to blend
Directions:
Take bag out of freezer and add liquids
1/2c kefir, 1/2 almond milk, 1/2 coconut water per bag letting the mixture sit for at least 10 minutes until slightly softened (for the smoothest texture)
With a high powered blender, blend on high for about 1 minute until very well combined and smooth. Add additional liquid as necessary for desired consistency
If making fresh vs frozen - be sure to add a handful of ice for a cold blended finish
