Bolognese Sauce

This staple thick, simmering meat sauce is a prep worthy favorite for an elevated (but still simple) pasta night or feeding a crowd!

Ingredients:

  • avocado oil and salt for cooking

  • 1/2 yellow onion (finely chopped)

  • 4-6 chopped celery stalks (finely chopped)

  • 2 large carrots (finely chopped)

  • 2-4 minced garlic cloves

  • 4-8 stripes of finely chopped pancetta OR prosciutto OR bacon

  • 1lb of ground beef

  • 1lb of ground pork

  • 1, 28oz can of whole tomatoes

  • 1, 16oz can of tomato sauce (not marinara sauce)

  • 1, 6oz can of tomato paste

  • 1/2 cup of dry cooking wine

  • optional 1/4 - 1/2c heavy cream

  • To Season/simmer: handful of thyme sprigs, 2 bay leaves, 1 parmesan rind

  • serve over pasta of choice or with fresh sour dough bread

Meal Prep Directions: 

  • Prep the veggies: Chop onion, celery, carrots, garlic and store in a large reusable food storage bag

  • Chop pancetta: into small pieces and store in a small reusable food storage bag

Meal Assembly Directions: 

  • In a dutch oven or soup pan heat olive oil and cook celery, carrots, onion until soft. Add garlic until fragrant but don’t burn! Next add the prepped choice of pancetta, prosciutto or bacon until crisp

  • Add ground beef and pork and breakup until nicely browned

  • Add wine until reduced and scrap the bottom of the pan so all the brown bits mix into the meat

  • Add all your cans of tomatoes and bring to a low simmer

  • Finally, add your simmer flavors (thyme sprigs, bay leaves and parm rind) these will be removed before serving

  • Let this simmer covered for at least 4 hrs or all day on your lowest heat, stirring occasionally, add in cream towards the last hour if you want a less tomato-y and more creamy finish!

  • Serve over pasta of choice

  • Store in large Meal Prep Container to enjoy throughout the week!
