One Pot Creamy Stroganoff
The perfect easy creamy pasta dish cooked in coconut or creamy milk, broth, and a savory beef, onion, mushroom, spinach sauté. Stir in the perfect cheese mixture for an easy one pot weeknight dinner
Ingredients:
1lb pasta
1lb ground beef
sprinkle of olive oil, salt, pepper
1/2 chopped yellow onion
small package of chopped mushrooms
1 cup full fat coconut milk or heavy ceam
4 cups chicken, beef, or veggie broth (bone broth is my fav for extra protein and collagen benefits!!)
large handful of spinach
1/4 cup each (sharp white cheddar, parmesan, mozzarella)
dried parsley and extra parmesan to top
Meal Prep Instructions:
Chop and meal kit all of your veggies (mushrooms, onion, parsley, spinach) refrigerate in a divided meal kit container (linked my favorite below!)
Measure your cheese and store together in an airtight glass container
Make the Meal:
Heat a large skillet with drizzle of olive oil. Add prepped onion and mushrooms and cook until soft. Remove from skillet and set aside.
Add ground beef to skillet, season with sprinkle of salt and pepper and break up until browned.
Add cooked veggies back to the skillet. Add spinach, milk/cream, broth and pasta. Stir and bring to a low simmer uncovered. Stir occasionally making sure most all the noodles are under the liquid.
When liquid is mostly soaked up and noodles are soft, turn to low heat and stir in cheese mixture until everything is creamy and well combined.
Top with dried parsley and any additional cheeses.
