Tender Steak Stir Fry
tenderized, juicy, bursting with flavor steak strips in a creamy, savory sauce to make an epic weeknight dinner feel restaurant worthy
Ingredients:
For the Steak:
1lb flank steak
1tbsp arrowroot starch (a pantry staple you should def have on hand!)
1tsp salt
1/2tsp pepper
avocado oil for cooking
For the sauce:
3 minced garlic cloves
1 inch fresh grated ginger
1tbsp toasted sesame oil
1/2c broth of choice (I love beef broth!)
4-6 full green onions thinly sliced
1/2c coconut aminos
1tbsp rice vinegar
1tbs fish sauce
Optional sides:
freshly prepped rice
stir fry veggies of choice (I love baby bok choy, peppers, broccoli)
Meal Prep Directions: I recommend prepping these ingredients no more than 2 days in advance to preserve texture and flavor profile.
Thinly sliced steak: toss in a bowl with starch, salt pepper. Store in in large reusable bag until ready to cook.
Chop optional veggies: Wash, chop and store in large reusable bag until ready to cook.
Cook optional rice: according to package instructions. Cool, store in airtight container until ready to re-heat.
Mix up the sauce: Mix all sauce ingredients into a small dressing jar and refrigerate until ready to use.
Meal Assembly Directions:
Cook the steak: Heat a cast iron skillet over medium high heat. Drizzle with avocado oil and once hot, add steak strips in batches so they each lay flat and you can easily flip. Sear on each side for 1-2 minutes until a nice brown crust forms but it doesn’t need to be fully cooked. Place seared steak in separate dish.
Cook sauce: Add prepped sauce mixture into the hot skillet and let it simmer / soften veggies and thicken for 3-5 min, whisking often. Add steak strips back in and toss well with sauce. continue cooking on a low simmer until sauce thickens more to coat the steak as desired.
Finish steak: Once reduced slightly and thickened, add steak strips back in and toss well with sauce. Continue cooking on a low simmer until sauce thickens more to coat the steak as desired.
Cook optional veggies: Remove steak and sauce from the skillet and add optional prepped veggies over high heat to sear/soften in leftover sauce/oil until slightly charred.
Reheat optional rice: in microwave or in skillet with veggies.
Serve: warmed steak sauce and veggies over rice - enjoy!
