
Fresh Carne Asada Bowl
This simple marinade is all you need for a tender, juicy, restaurant style carne asada that you can easily grill on the stove top and assemble with these fresh ingredients for a gourmet feeling yet completely prep worthy weeknight dinner bowl

For the Steak
- 1 lb flank steak
- ¼ cup cilantro fresh chopped
- 1/4` cup olive oil
- 1 lime juice
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chipotle chili powder
For the Mango Corn Salsa
- 1 jalapeno
- 1 lime
- 1 mango
- 1 cup cherry tomatoes quartered
- ½ cup corn canned or fresh
- 2 tbsp cilantro freshly chopped
- Salt and pepper to taste
For the Bowl
- 2 cups romaine lettuce or rice!
- 1 cup black beans drained
Instructions
Meal Prep Instructions:
Marinate steak
- mix marinade ingredients (1/4 cup cilantro, 1/4` cup olive oil, 1 lime, 1 tsp salt, 1 tsp garlic powder, 1 tsp cumin, 1 tsp chipotle chili powder in a bowl and pour over steak to marinate in a reusable storage bag or glass container in the fridge for 2-4hrs (not overnight or citrus will turn bitter!)
Make the salsa
- Mix ingredients (1 jalapeno, 1 lime, 1 mango, 1 cup cherry tomatoes, 1/2 cup corn, 2 tbsp cilantro) in a small prep bowl and refrigerate for up to 2 days
Prep bowl ingredients:
- wash and chop romaine lettuce or cook rice and refrigerate until ready to assemble
Meal Assembly Instructions:
Cook Steak
- In a hot cast iron skillet, cook marinated steak for 5-8 min each side depending on how thick your steak is, until charred and crispy. Let it rest covered on a cutting board for another 5 min before slicing.
Assemble bowl:
- Add prepped lettuce or rice to a bowl with sliced steak, prepped salsa, black beans and prepped avocado crema
