
Stone Fruit Caprese Salad
All you need is a few simple ingredients to bring this layered Caprese inspired salad to life! It’s a show stopper with the ultimate flavor, crunch and texture!WATCH ME MAKE THIS
Ingredients
- 1 butter lettuce
- 2 tomatoes large, colorful heirloom style!
- 1 plum large and ripe
- 1 peach large and ripe
- 1 apricot or other stone fruit of choice!
- 1 avocado thinly sliced
- 8 oz burrata
- ½ cup mozzarella
- ¼ cup basil freshly chopped
- 1 lemon juice and zest
- ¼ cup olive oil
- 3 tbsp balsamic vinegar or balsamic glaze
- salt and pepper to season
- ¼ cup pine nuts or nut of choice

Meal Prep Instructions
- In a large flat salad bowl cover the bottom with roughly chopped baby butter lettuce leaves with ball of burrata in the middle
- Thinly slice tomatoes, stone fruits and avocado. Layer the sliced ingredients alternating a fruit, tomato, avocado in a spiral around the burrata until everything is used up
- Sprinkle torn mozzarella over the salad, top with lemon juice + zest, basil, salt and pepper and generous drizzle of oil/balsamic.
- Optional: toast 1/2 cup of pine nuts in 1tbsp butter until browned. Pour over salad and enjoy!
