Ultimate Summer Salsa

This is a massive fresh produce dumps of vibrant, bold textures and flavors of summer for a sweet and refreshing salsa to pair with any grilled protein, veggies, top tacos or dip with chips!

Ingredients
  

everything should be freshly diced small:

  • 1 avocado
  • 1 Persian cucumber
  • 2 peach not overly ripe
  • ½ cup pineapple
  • ½ cup mango
  • ½ cup strawberries
  • 1 jalapeno de-seeded if you want mild
  • 1 lime juice + zest
  • 1 shallot small
  • ¼ cup mint
  • salt and pepper to taste

Instructions
 

Meal Prep Instructions – this is best prepped day of planning to consume so avocado doesn't go brown and it doesn't get too mushy!

  • Add all diced/juiced ingredients into a large bowl and gently toss until well combined. Let it sit for at least 30 min to really marinate all the flavors together!
