Nut-free energy balls

Perfect for a school free snack that is high fiber and high protein for a sweet treat that goes great in lunch / snack boxes!

Ingredients
  

  • 1 ½ cup rolled oats not old fashioned oats, these will be too thick
  • ½ cup sunflower butter
  • cup coconut butter or nut butter of choice
  • ¼ tsp salt
  • ¼ cup maple syrup
  • 1 tbsp hemp seed
  • 1 tbsp chia seed
  • 1 scoop vanilla protein powder
  • optional: mini chocolate chips, cacao nibs, coconut flakes as desired

    • In small bowl combine 1/2 cup sunflower butter, 1/3 cup coconut butter, 1/4 cup maple syrup and warm in a sauce pan or microwave until a very smooth creamy sauce forms – do not overheat or the dough won't form!

    Form dough

    • In a large bowl add 1 1/2 cup rolled oats, 1/4 tsp salt, 1 tbsp hemp seed, 1 tbsp chia seed, 1 scoop vanilla protein powder, optional: mini chocolate chips, cacao nibs, coconut flakes as desired. Pour warmed liquid mixture over grains and use hands to combine, kneading everything together until very well combined and sticks together easily.
    • Test by rolling and squeezing a spoonful amount in your palms to see if the ingredient’s stick and form a smooth ball. If the dough needs more structure, add more oats and if it needs to be stickier, drizzle more of sunflower butter and maple syrup. You may have to adjust recipe to texture preference!

    Form balls

    • Press dough together to form small balls by rolling between your palms, store in the fridge (they will also harden and combine more in a cooler temp so don’t worry if they feel a little mushy from the heat of your hands)

    • store in airtight food container in the fridge and enjoy within one week
