Healthy Green Goddess Dressing

Be a GODDESS with this vibrant and tangy dressing that is packed with so many fresh herbs, citrus and some additional flavor gems like capers, greek yogurt, and apple cider vinegar. This is the perfect spring staple that will be on repeat.

Ingredients
  

  • heaping quarter cup of fresh herb blend the more herbs the better! I used about a tbsp each of mint, cilantro, basil, chives, dill, & parsley!
  • ¼ c olive oil
  • ½ c plain Greek yogurt
  • 1 full avocado
  • juice and some zest from 1 lemon
  • 1 small garlic clove
  • 1-2 tsp of drained capers (depending on how strong you want the flavor)
  • 2-3 tbsp of water to thin to desired consistency
  • salt and pepper to taste

Notes

Use a handheld immersion blender and blend until very smooth and pours easily. Add additional water or lemon juice to thin as necessary. Refrigerate in an airtight container for up to 5 days. Use as a dip for fresh veggies, a dressing for salads, or a topping for tacos.
