
Carrot Hummus
Creamy hummus with bold fall flavors to brighten any dish!
Ingredients
- 1 can of garbanzo beans don't drain!!
- 1 lemon juice
- ¼ cup Olive oil
- ¼ cup Tahini (a nutty store bought spread made from sesame seeds – almost like a peanut butter!)
- 1 garlic clove
- ½ tsp turmeric powder
- 1 tsp salt
- 1 ½ cups carrots sliced and steamed until very soft – or you can buy frozen and thaw completely until soft
Instructions
Meal Prep Instructions:
- Soft boil the can of beans + liquid from the can for about 5 min until some of the liquid is absorbed (this is a crucial step for the creaminess!)
- Thaw or steam carrots until very soft
- To a high powered blender add warmed beans (plus their liquids!), soft carrots, 1 lemon juice, 1/4 cup Olive oil, 1/4 cup Tahini, 1 garlic clove, 1/2 tsp turmeric powder, 1 tsp salt.
- Blend on high until very well combined (add more olive oil & lemon juice if it feels too thick) Top with addition olive oil and pepper – enjoy!
