Aussie Bite Healthy Costco Copycat

Your favorite Aussie Bite Costco snack remix filled with super seeds, whole and ancient grains and low processed sugar from nature for a perfectly healthy and satisfying homemade goodie you don’t have to feel guilty about

Ingredients: 

Meal Prep Directions: heat oven to 350

  • Pulse blend grains and seeds using small food processor or blender add oats, amaranth, coconut flakes, quinoa, pepitas, sunflower seeds, hemp, chia, flax and pulse blend until a grainy texture forms - it should not be a super fine powder!

  • Add dried fruit mix blended grains and seeds and dried fruit in a large bowl.

  • Add remaining ingredients melt butter or coconut oil in the microwave or on the stove. To a bowl mix melted butter, maple syrup, coconut sugar, baking soda and salt until a smooth liquid forms. Pour liquid over dry mixture and stir until well coated. Using your hands, knead the mixture until a very well combined sand like texture forms. Test the stickiness by rolling a small ball and making sure it forms and stays together easily. This is where you can any extra oats to thicken up the mixture a bit.

  • Stuff mini muffin tin fill as many of the muffin holes about 3/4 of the way full by firmly packing mixture in and smoothing the top. Bake at 350 for 10-12 minutes until golden on the top - they won’t feel fully hardened on the inside and that’s okay!

    • If you don’t have a mini muffin tin your can form the bites with your hands and bake but they may not stay together as well as being tightly packed in a muffin tin. If you want to use a full sized muffin tin, you may have to increase your bake time by 5 or so min!

  • COOL COMPLETELY a key to this recipe is to cool bites IN the muffin tin completely before trying to remove (about 20 min). If you remove too early they will crumble.

Storing:

  • store in airtight food container in the fridge and enjoy within one week
