Easy Salsa Verde Chicken Taquitos

this crockpot essential meal is 4 simple ingredients for the perfect simple cheesy crunch that makes any weeknight meal a hit

Ingredients:

  • 1 cup of mild salsa verde

  • 3 chicken breasts

  • 1 cup of mexican blend cheese

  • 12 almond flour tortillas (siete is my fav!)

  • Avocado oil (for frying)

Meal Prep Directions: since this is a crockpot meal I recommend doing this day of but if you wanted to prep anything ahead you can make the chicken, shred, and store in fridge until ready to assemble.

Meal Assembly Directions:

  • Crockpot the chicken add the chicken and salsa verde to a crockpot and cover on high for 4-6 hours until chicken shreds easily

  • Roll the taquitos heat avocado oil over medium high heat in a large cast iron skillet (covering the entire base of the skillet) meanwhile add scoop of the shredded chicken to the middle of a tortilla, add a sprinkle of cheese and tightly roll. Repeat with remaining chicken and tortillas

  • Fry the taquitos by slowly placing each tortilla in the oil with tongs, making sure they sizzle but don’t pop the oil. Fry each side for 3-5 minutes or until browned to your liking. Place on a paper towel lined plate to cool

  • These are delicious dipped in salsa, guac, sour cream etc!

You can store these for up to 3 days in the fridge and reheat in the microwave.
