Easy Salsa Verde Chicken Taquitos
Ingredients:
1 cup of mild salsa verde
3 chicken breasts
1 cup of mexican blend cheese
12 almond flour tortillas (siete is my fav!)
Avocado oil (for frying)
Meal Prep Directions: since this is a crockpot meal I recommend doing this day of but if you wanted to prep anything ahead you can make the chicken, shred, and store in fridge until ready to assemble.
Meal Assembly Directions:
Crockpot the chicken add the chicken and salsa verde to a crockpot and cover on high for 4-6 hours until chicken shreds easily
Roll the taquitos heat avocado oil over medium high heat in a large cast iron skillet (covering the entire base of the skillet) meanwhile add scoop of the shredded chicken to the middle of a tortilla, add a sprinkle of cheese and tightly roll. Repeat with remaining chicken and tortillas
Fry the taquitos by slowly placing each tortilla in the oil with tongs, making sure they sizzle but don’t pop the oil. Fry each side for 3-5 minutes or until browned to your liking. Place on a paper towel lined plate to cool
These are delicious dipped in salsa, guac, sour cream etc!
You can store these for up to 3 days in the fridge and reheat in the microwave.
