Gluten-Free Granola

Ingredients: 

  • 1 ½ cups rolled oats

  • 1 cup raw nut mixture (almond, cashew, walnut)

  • 1tsp cinnamon

  • 1tsp vanilla

  • ¼ cup maple syrup

  • ¼ cup melted coconut oil

  • Dash of salt

Directions: 

  • Heat oven to 350.

  • Pulse oats and nut mixture in a blender or food processor until grainy.

  • Pour oat/nut mixture into a mixing bowl and combine with remaining ingredients.

  • Mix well and spread onto a parchment paper-lined baking sheet and bake for 15 minutes.

  • Let it cool and continue to crisp on the counter before storing in an airtight container.
