Protein French Toast Bake

Everything you want out of French Toast without the dipping and flipping PLUS the sneaky protein add-ins and antioxidant berry blend makes for a nutritiously delicious sweet breakfast

Ingredients:

  • 6-8 raw scrambled eggs - depends on thickness of bread, see notes below!

  • 1 scoop of vanilla protein - I love Truvani or Kachava

  • 1tbsp vanilla

  • 2tsp cinnamon

  • 1 - 1.5 cup of whole milk - enough to cover the bread, see notes below

  • 1/4 cup raw maple syrup + some some for serving

  • 1 small loaf of whole grain bread (cubed)

  • 1.5 cups of mixed berries & banana

  • Optional toppings: peanut butter drizzle, chopped walnuts, syrup

Meal Prep Directions: 

  • Cube your bread and set aside. Mix your eggs, vanilla, cinnamon, whole milk, maple syrup, protein of choice until well combined. Grease an oven safe casserole dish or dutch oven. add your bread and fruit and careful toss to evenly distribute fruit.

  • pour in egg mixture over bread making sure all the bread is covered. *if your bread is not covered, consider whisking another egg/splash of milk and adding to the top!

  • Top with any additional berries and let your mixture sit for at least 1 hour or ideally overnight in the fridge (perfect for a stress and mess free breakfast!)

Meal Assembly Directions:

  • Heat oven to 400. Add dish uncovered to the oven and cook for 30ish minutes or until center is not longer mushy (timing very much depends on dish size/depth and size of loaf.. just use your best instinct on a finished center:))

  • Take out of the oven and cover with a lid or foil, letting it rest for at least 10 minutes before dishing out and topping!

  • Store leftovers in fridge for up to 7 days
