Steak Farro Caesar Salad
Ingredients:
large handful of chopped romaine
1/2lb of flank or flap steak (+ salt and pepper to season)
1/2 cup of fresh shredded parm cheese
handful of homemade or store-bought croutons
1 cup of cooked farro (cook according to package directions, I usually do 1/2 cup farro simmered in 1 cup of water or broth until water is evaporated and farro is soft)
optional toppings: sliced green onion and microgreens
Drizzle of this Classic Caesar Dressing
Directions:
Heat a large pan with avocado oil on high heat
Season both sides of steak generously and place in hot oiled pan
Sear each side for 3-5 minutes depending on thickness and how well done you like your steak
Take steak off heat and place on a cutting board with foil on top, letting the meat rest for 3-5 mintues
Meanwhile load the remaining ingredients into a salad bowl and toss well.
Slice the steak and top your salad!
