Vegan Protein Muffins
High protein, vegan banana muffins with the simplest ingredients that will make these your go-to staple perfect for breakfast on the go, snacks, and freezing in bulk batches
Ingredients:
3 ripe bananas (mashed)
1/4 cup melted coconut oil
1 cup plant based milk
1tsp vanilla
1tsp cinnamon
1/2 cup maple syrup
2c whole wheat flour
2 tsp baking soda
1/2 tsp salt
1-2 tbs of protein of choice: I like vanilla protein powder, quinoa flour or ground flaxseed
Directions:
Mix wet ingredients together, mix dry ingredients together. Mix together until well combined
Pour into greased muffin tin & bake at 350 for 10-12 min or until center is cooked through
