Vegan Protein Muffins

High protein, vegan banana muffins with the simplest ingredients that will make these your go-to staple perfect for breakfast on the go, snacks, and freezing in bulk batches

Ingredients:

  • 3 ripe bananas (mashed)

  • 1/4 cup melted coconut oil

  • 1 cup plant based milk

  • 1tsp vanilla

  • 1tsp cinnamon

  • 1/2 cup maple syrup

  • 2c whole wheat flour

  • 2 tsp baking soda

  • 1/2 tsp salt

  • 1-2 tbs of protein of choice: I like vanilla protein powder, quinoa flour or ground flaxseed

Directions:

  • Mix wet ingredients together, mix dry ingredients together. Mix together until well combined

  • Pour into greased muffin tin & bake at 350 for 10-12 min or until center is cooked through
