
Coconut Curry Peanut Marinade
when you need something stronger than a salad dressing to marinate your protein but not as intense as a true marinade to equal as a delicious drizzle and topping – THIS IS IT.
Ingredients
- ¼ cup avocado oil
- 2 tsp rice vinegar
- 2 tsp fish sauce
- 2 tsp coconut sugar
- 2 garlic cloves minced
- 1 tsp red curry paste mild
- ⅓ cup coconut milk full fat, canned
- 1 tsp lime zest
- ¼ cup creamy peanut butter
Instructions
Meal Prep Instructions:
- Blend all ingredients in a food processor or immersion blender until smooth and well combined. Store in the fridge in an airtight glass container for up to 5 days and shake well before using.
