
Carrot Lentil Hummus
A high fiber and protein loaded snack to keep you full to pair with any veggies, crackers or spread on your favorite wrap/sandwich
Ingredients
- ½ cup orange lentils
- ½ cup carrots
- 1 lemon
- ⅓ cup Olive oil
- ¼ cup Tahini
- 1 garlic clove
- salt & pepper to season
- splash of water to thin as necessary
Instructions
Meal Prep Directions:
cook lentils
- Soft boil 1/2 cup of lentils with 1 cup of water or broth covered until liquid is absorbed and lentils are soft (10-15 min) add more water as necessary to cook until soft.
Steam carrots
- Add chopped carrots to a steam basket and small sauce pan filled with 2 inches of water. Cover and simmer until carrots are soft (about 8 min). Cool slightly
Blend ingredients
- Add cooked lentils, steamed carrots and all other ingredients to a high power blender
- Blend on high until very well combined (add water one tablespoon at a time if it feels too thick)
- Store in glass container for up to 5 days in the fridge
