Carrot Lentil Hummus

A high fiber and protein loaded snack to keep you full to pair with any veggies, crackers or spread on your favorite wrap/sandwich

Ingredients
  

  • ½ cup orange lentils
  • ½ cup carrots
  • 1 lemon
  • cup Olive oil
  • ¼ cup Tahini
  • 1 garlic clove
  • salt & pepper to season
  • splash of water to thin as necessary

Instructions
 

Meal Prep Directions:

    cook lentils

    • Soft boil 1/2 cup of lentils with 1 cup of water or broth covered until liquid is absorbed and lentils are soft (10-15 min) add more water as necessary to cook until soft.

    Steam carrots

    • Add chopped carrots to a steam basket and small sauce pan filled with 2 inches of water. Cover and simmer until carrots are soft (about 8 min). Cool slightly

    Blend ingredients

    • Add cooked lentils, steamed carrots and all other ingredients to a high power blender
    • Blend on high until very well combined (add water one tablespoon at a time if it feels too thick)
    • Store in glass container for up to 5 days in the fridge
