
Cacao Spinach Sourdough Muffins
A “sweet” treat that has hidden greens and real cacao for a healthy rich flavor with added antioxidants. mainly sweetened with raw maple syrup and banana for a smooth delicious texture

Ingredients
Ingredients to blend:
- 2 eggs
- 1 banana mashed
- ¼ cup coconut oil melted
- 1 tsp vanilla
- ¼ cup maple syrup
- ¼ cup sourdough discard or more banana / apple sauce as a replacement
- 1 cup spinach leaves
Dry Ingredients
- 1 cup flour
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp salt
- ¼ cup cacao powder
- ¼ cup mini chocolate chips
Instructions
Meal Prep Instructions:
- Preheat oven to 375
- Add “ingredients to blend” list to a blender and blend on high until smooth.
- Add dry ingredients (except chocolate chips) to a large mixing bowl and mix until evenly combined.
- Pour blended ingredients into dry ingredient mixture and gently mix until just combined, not over mixing.
- Fold in mini chocolate chips until just combined.
- Scoop into muffin tin (or I love this silicon tray for easy cleaning and no sticking!)
- Bake for 5 minutes at 375, then lower heat to 350 and bake for another 5-10 minutes, checking frequently with a knife in the center of your biggest muffin to make sure it comes out clean. Cool in tray completely before popping out and storing.

Meal Prep Tips:
- Store in an airtight container for up to 5 days
- You can easily double and freeze a batch in an airtight bag for up to 3 months!
