Protein Banana Bread

A dense, nourishing bread that is filled with fiber and protein to fuel the busy days! Very kid friendly and great to bulk prep + freeze

Ingredients
  

  • 2 Bananas
  • 1 scoop vanilla protein powder of choice
  • ¼ cup honey
  • ¾ cup greek yogurt
  • 1 tsp vanilla
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1 tsp baking powder
  • 1 cup whole wheat flour
  • ½ cup chocolate chips

Meal Prep Instructions: preheat oven to 350

    Make the batter

    • To a large bowl add wet ingredients – 2 Bananas (mashed), 1/4 cup honey, 3/4 cup greek yogurt, 1 tsp vanilla, 2 eggs to a bowl and mix until well combined
    • Add dry ingredients – 1 scoop vanilla protein powder of choice, 1/2 tsp salt, 1 tsp cinnamon, 1 tsp baking powder, 1 cup whole wheat flour, fold into wet ingredients until just combined but not over mixing.
    • Fold in chocolate chips (leave a few for topping!)

    Bake bread

    • add batter to a mini silicon bread mold, top with additional chocolate chips, bake for 30 minutes and check center – cook time varies on the mold size, if you are using a regular size bread dish it could take up to an hour! Remove when center is fully set. Cool completely before slicing! This is important or it will just fall apart!
    • Consume within 3-4 days or freeze to enjoy later!
