
Protein Banana Bread
A dense, nourishing bread that is filled with fiber and protein to fuel the busy days! Very kid friendly and great to bulk prep + freeze

Ingredients
- 2 Bananas
- 1 scoop vanilla protein powder of choice
- ¼ cup honey
- ¾ cup greek yogurt
- 1 tsp vanilla
- ½ tsp salt
- 1 tsp cinnamon
- 2 eggs
- 1 tsp baking powder
- 1 cup whole wheat flour
- ½ cup chocolate chips
Instructions
Meal Prep Instructions: preheat oven to 350
Make the batter
- To a large bowl add wet ingredients – 2 Bananas (mashed), 1/4 cup honey, 3/4 cup greek yogurt, 1 tsp vanilla, 2 eggs to a bowl and mix until well combined
- Add dry ingredients – 1 scoop vanilla protein powder of choice, 1/2 tsp salt, 1 tsp cinnamon, 1 tsp baking powder, 1 cup whole wheat flour, fold into wet ingredients until just combined but not over mixing.
- Fold in chocolate chips (leave a few for topping!)
Bake bread
- add batter to a mini silicon bread mold, top with additional chocolate chips, bake for 30 minutes and check center – cook time varies on the mold size, if you are using a regular size bread dish it could take up to an hour! Remove when center is fully set. Cool completely before slicing! This is important or it will just fall apart!
- Consume within 3-4 days or freeze to enjoy later!
