
Apple Pecan Granola
Sightly soft and loaded with fresh fiber and plant protein for a nourishing and satiating snacking granola without all the store-bought junk!
Equipment
Ingredients
- 1 ½ cups rolled oats
- 1 apple honeycrisp is best – shredded
- ¼ cup pecan raw, whole
- 1 tbsp ground flax seed
- 1 tbsp hemp seed
- 1 tbsp chia seed
- 1 tbsp vanilla
- ¼ cup maple syrup
- ¼ cup coconut oil melted
- ¼ tsp salt
Instructions
Meal Prep Instructions:
- Heat oven to 375
- Pulse oats and nut/seed mixture in a blender or food processor until a thick grainy texture forms – it should not be fully ground.
- Pour oat/nut & seed mixture into a large mixing bowl and combine with remaining ingredients
- Mix well and spread onto a parchment paper-lined baking sheet and bake for 25 minutes – check texture to see if it's still soft. It will be a naturally softer texture because of the juices of the raw apple and you don't want it to burn! It will harden slightly as it cools
- Let it cool and continue to crisp on the counter before storing in an airtight container for up to one month
