
Gut Glow Detox Soup
The perfect combination of plant fiber, anti-inflammatory and antioxidant rich ingredients to sooth and strengthen your gut lining and support natural digestion and detoxification
Ingredients
- 1 tbsp olive oil
- 3 cups green cabbage shredded
- 6 celery stalks diced
- 2 carrots diced
- 2 garlic cloves minced
- ½ red onion diced
- 1 can garbanzo beans drained
- 6 cups bone broth or broth of choice
- 1 tsp ginger freshly grated or powder
- 1 tsp turmeric freshly grated or powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp thyme
- 1 ½ tsp salt
- ½ tsp pepper
- 1 lemon juice and zest
- ¼ cup parsley freshly chopped
Instructions
Meal Prep Instructions:
- Prep Produce: shred 3 cups green cabbage, dice 6 celery stalks, 2 carrots, 1/2 red onion, mince 2 garlic cloves. Add everything to a large reusable food storage bag, refrigerate until ready to assemble meal.
Meal Assembly Instructions:
- Cook Veggies: To a large dutch oven or stock pot over medium high heat add 1 tbsp olive oil. Once hot add prepped veggies and cook until softened and slightly charred, about 10 min. Lower heat to medium and add spice mixture: 1 tsp ginger, 1 tsp turmeric, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp thyme, 1 1/2 tsp salt, 1/2 tsp pepper. Toss with veggies to coat.
- Simmer: Add 1 can garbanzo beans (drained), 6 cups bone broth. Stir until well combined, cover and simmer for 10-15 minutes until veggies are very soft and soup is fragrant. Taste and add additional seasoning or broth to your liking.
- Serve: Finish soup with juice and zest from 1 lemon and 1/4 cup parsley. Enjoy!
