
Vegan Protein Muffins
High protein, vegan banana muffins with the simplest ingredients that will make these your go-to staple perfect for breakfast on the go, snacks, and freezing in bulk batches

- 3 bananas (ripe and mashed)
- ¼ cup coconut oil melted
- 1 cup almond milk or plant based milk of choice
- 1 tsp vanilla
- 1 tsp cinnamon
- ½ cup maple syrup
- 2 cup whole wheat flour
- 2 tsp baking soda
- ½ tsp salt
- 1 scoop vanilla protein powder I like vanilla protein powder, quinoa flour or ground flaxseed
Instructions
Meal Prep Instructions:
- Mix wet ingredients together, mix dry ingredients together. Mix together until well combined
- Pour into silicon muffin tin & bake at 350 for 10-12 min or until center is cooked through
