20 Minute Ground Beef and Broccoli Stir Fry

When you want those delicious takeout flavors but in a quick low hassle dinner recipe that everyone will love!

Ingredients
  

For the Beef

  • 1 lb Ground Beef
  • 2 cups broccoli
  • 2 garlic cloves
  • cup coconut aminos
  • 1 tbsp sesame oil
  • 1 tsp fish sauce
  • 1 tbsp honey
  • 1 tsp arrowroot starch
  • ¼ cup beef broth or bone broth!
  • olive oil for cooking

Optional Toppings – peanuts, green onion, cilantro

For the rice

  • 1 cup brown rice I like jasmine!
  • 1 cup carrots shredded
  • olive oil for cooking

    Prep Produce

    • Wash and chop 2 cups broccoli, shred 1 cup carrots (about 1 large carrot), mince garlic. Refrigerate everything separate until ready to cook

    You can cook rice ahead but I think it's best done fresh while beef cooks!

      Meal Assembly Instructions

        Cook rice

        • Add 1 cup brown rice, a little oil and 3 cups of water to a sauce pan and bring to a simmer. Cover and simmer until water absorbs (15 min – start on following steps during this time!). Test rice for softness, add an additional cup of water repeating until rice is tender to your liking, remove from heat, stir in prepped shredded carrot, cover and set aside.

        Cook broccoli

        • Heat a large deep skillet over medium high heat with oil. Once hot, add prepped broccoli and garlic, cook until softened stirring often for about 5 min.

        Mix up sauce

        • While broccoli cooks, add 1/3 cup coconut aminos, 1 tbsp sesame oil, 1 tsp fish sauce, 1 tbsp honey, 1 tsp arrowroot starch, 1/4 cup beef broth to a mason jar and whisk until well combined and starch isn't clumpy

        Cook Beef

        • Move broccoli to the side of the pan and add ground beef, breaking up until well browned then mix together with broccoli. Lower heat, add sauce, stir until everything is well coated, bring to a simmer. I like to cover mine while it simmers so it stays a little soupy and doesn't evaporate too fast! Simmer for up to 10 minutes or until mixture has thickened slightly.

        Assemble bowl

        • Add rice/carrot mixture to a bowl, top with beef mixture and optional peanuts, green onions and cilantro. Enjoy!
