
Almond Pulp Energy Bites
Ingredients
- ½ cup of almond pulp (after blending and straining 1 cup of raw almonds with 2 cups of water) If you don’t want to use pulp you can use raw almonds soaked overnight to soften but it won’t have as creamy of a texture!
- ¼ cup almond butter (or peanut butter if you prefer!)
- 2 tbsp melted coconut butter (or other very creamy “butter”.. almond, cashew, nutella??)
- ¼ cup rolled oats
- 1 tbsp hemp seed
- 1 tbsp chia seed
- 1 tsp flax seed
- 3 tbsp maple syrup
Instructions
Directions:
- Add all ingredients to a large bowl and use a spatula to mix until well combined and sticky like dough
- Roll into small balls (these are dense and a little bite goes a long way!:))
- Refrigerate overnight so they harden slightly – enjoy within 5 days!
