
Whipped protein and fiber cookie dough

Ingredients
Makes about 1 1/2 cups
- 1 can chickpeas drained and rinsed
- ¼ cup peanut butter creamy!
- 2 tbsp maple syrup
- 1 tbsp coconut oil melted
- 1 scoop vanilla protein powder I used "Just Ingredients" vanilla bean flavor
- ¼ cup mini chocolate chips
- ¼ tsp salt
Instructions
Meal Assembly Instructions:
- In a food processor or an immersion blender, combine beans, peanut butter, syrup, protein powder and oil until a cookie dough like consistency forms. Stir in desired amount of optional salt and mini chocolate chips. Refrigerate in airtight container and enjoy for up to 5 days.
