Pumpkin Oat Breakfast Bake
Not oatmeal, but not bread, just a soft, dense, delicious breakfast square that satisfies everything your body needs to fill your morning with nourishing ingredients!
Ingredients
- 1 cup pumpkin puree
- 1 cup milk or plant based option
- 1 egg
- ⅓ cup maple syrup I prefer a lower sugar breakfast but if these don't turn out sweet enough for you, you can always add more maple syrup!
- 1 tsp vanilla
- 1 cup almond flour
- 1 ½ cups oats
- 1 tbsp pumpkin pie spice
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- optional toppings: mini chocolate chips, pecans, flaky sea salt
Instructions
Meal Prep Instructions: preheat oven to 350
Make the batter
- To a large bowl add wet ingredients – 1 cup pumpkin puree , 1 tbsp pumpkin pie spice, 1 tsp vanilla, 1 egg, 1 cup milk to a bowl and mix until well combined
- Add dry ingredients – 1/3 cup maple syrup1 cup almond flour, 1 1/2 cups oats, 1 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, fold into wet ingredients until just combined but not over mixing.
Bake batter
- add batter to an 8inch square baking dish, top with optional chocolate chips, pecans and flaky sea salt.
- let it rest for 30 min to help oats begin to soak up moisture.
- Bake for 40-45 minutes and check center with a knife to make sure it comes out clean – cook time varies and it will still feel very soft even if a knife comes out clean, you have to cool it almost completely to let it fully set before slicing – oats will continue to soak up moisture so you don't want to over cook it.
- Consume within 3-4 days or freeze to enjoy later!
