
5 Ingredient BBQ Chicken Bowl
The easiest family friendly staple for a summertime dinner on the fly!
Ingredients
For the Chicken:
- 6 chicken breasts
- 2 cups homemade bbq sauce or fav store-bought
For the bowl:
- 2 cups rice
- 4 cups broccoli
- homemade ranch dressing
Instructions
Meal Prep Directions:
- Cook rice: according to package instructions. Cool before refrigerating for up to 2 days.
- Marinate chicken: Brush each chicken breast with bbq sauce (doesn't have to be drowning in the sauce! At least 2 hours or overnight is best!
Meal Assembly Instructions:
- Grill Chicken: on an outdoor grill or in a cast iron skillet for 5-8 minutes on each side or until internal temp reaches 160 – rest under foil on cutting board for another 5 before slicing.
- Cook veggies: While chicken cooks, chop up broccoli or veggie of choice. You can steam, roast or throw onto the grill with chicken under tender and charred to your liking.
- Assemble meal: to a bowl add warmed up rice, sliced chicken, cooked broccoli. Drizzle with ranch and bbq sauce – enjoy!
