Toasted Sesame Edamame Hummus

Creamy protein packed hummus drizzled with toasted sesame oil and garnished with oregano and sesame seeds for the perfect gourmet snack

Ingredients
  

  • 1 can of garbanzo beans
  • 1 Juice
  • 2 tbs Olive oil
  • 1/4c Tahini (a nutty store bought spread made from sesame seeds – almost like a peanut butter!)
  • 1 minced garlic clove
  • dash of salt & pepper
  • ½ cup of edamame beans (I like to buy a frozen bag from Whole Foods, and thaw before using)
  • toppings: drizzle of sesame oil chopped fresh oregano leaves. sesame seeds

Instructions
 

Directions: 

  • Soft boil the can of beans + liquid from the can and thawed edamame beans for about 5 min until some of the liquid is absorbed (this is a crucial step for the creaminess!)
  • Add bean mixture to a high power blender and add remaining ingredients (except for toppings)
  • Blend on high until very well combined (add more olive oil & lemon juice if it feels too thick)
  • Top with a drizzle of toasted sesame oil, fresh oregano leaves and sesame seeds
